The most significant component of the project involved refurbishment of the seminary wing and the main body of the 19th century heritage-listed St Josephs building and conversion to a world-class boutique hotel. A new multi-level accommodation and facilities wing – including an indoor swimming pool and health spa – was also constructed.
The first floor of a stand-alone building known as the Theatre Building was refurbished into office space and the ground floor reinstated as a theatrette in keeping with its historic character.
A new 320 square-metre pavilion incorporating a bar, fully-equipped kitchen and self-contained conference and function centre catering for more than 200 guests was built adjacent to Victoria’s premier polo field.
Construction of the contemporary Shadowfax Winery with laboratory and expansive cellaring facility features completed the project.
The Hotel has since been successful with every award achievable within the construction, architecture, tourism and hospitality industry.
